Hi, my name’s Tony – it’s great to meet you! I’m 43 years old and I am a T12/L1 complete spinal cord injury patient. For those unaware, that basically means I am paralyzed from the waist down. I was hit by a truck while I was walking on 9/13/2010. Since then life has changed, primarily for the better.

Previous to my injury, I spent a large amount of my adult life working in the restaurant industry. Cooking has been a passion of mine for as long as I can remember.

The goal of this blog is to establish a place for people to learn some classic New Orleans cooking, healthy cooking, and downright good food in general. I want to ensure that people, regardless of injury status, have a place to learn these skills and recipes. If I can do it, so can anyone.

Since my injury I have gotten married and had children, so my cooking is geared towards a family of four. The idea to do this blog came to me through my wife. I’ve been teaching our daughter how to cook, and I’m not sure if that’s where she got It from, but I’ll be sure to keep mental notes on some her questions as I’m sure those are some that others will be wondering about as well. I will also periodically post some basic information on spices, skills, tips and general experiences.
