Breakfast burrito with chorizo hash and egg. 

When I lived in Tucson Arizona for 2 years after Hurricane Katrina, I fell in love with a small burrito shop called “Viva Burrito.” I have yet to find anything close to it anywhere.  I’ve come close with a few variations, this is what I do for chorizo.  

First off, this is not the chorizo at Walmart or most chain groceries.  The stuff that comes sealed in plastic without a casing.  This made more like a traditional delis sausage in a natural casing.  The flavor is amazing and it keeps it’s form well, like a regular deli sausage.  The stuff in the plastic is great, for chili or to throw in an omelette; however, if you want a texture to it, this is the way to go.  

Before I started cooking I made some pic de Gallo, with a yellow onion, tomato, cilantro and lime juice.  I diced the onion and tomato, combined everything and then added the lime juice, then set it in the fridge. 

To start cooking I took half an onion, half a red bell pepper, a jalapeño and some cilantro.  I have everything a touch chop and set it aside. After the vegetables are chopped I cubed the potato into 1/2 inch cubes and then sliced the chorizo into half moons.  

Once everything is chopped I got some oil good and hot in a skillet and then dumped in the potato and seasoning them with just a bit of “slap ya momma.”  When the potatoes were cooked I removed them, dumped the oil and then added in the vegetable.  After they cooked for just a minute I added the chorizo and let them all cook together until the vegetable were soft and chorizo were cooked through. At that time I added the potato back in and folded  them together.  

When the hash was complete it was time to scramble a few eggs in butter and then assemble.

The great thing about this is that you can literally make your burrito in any way you choose. I prefer simple.  

Some hash, the egg, Pico and cheese.  That’s it till that up and I’m happy.d. 

Some people add pinto beans, nacho cheese, sour cream, guacamole, fajita peppers..: you name  it the combinations are endless.  

This is one of those meals that you have fun with and make it what you want.
