I love breakfast for dinner and I love making dishes that use leftovers.  This combines the best of both worlds. While this recipe shows how to make a breakfast quesadilla with fresh sausage. The can easily be subbed out for any leftover protein you prefer; especially, something like carnitas or Carne Asada. This is also a super fast weeknight meal or early morning breakfast. 

To make this you’ll use:

Cumin

Coriander 

lime juice 

1 pound of bulk sausage 

— note any meat you like worms here —

Shallot- diced

Fresh cilantro 

1 garlic toe-minced

1 jalapeño diced 

6 eggs 

About 2 tablespoons of milk 

4 oz of fresh shredded cheese- I use Colby jack

Tortillas  

First thing I do is prepare the meat portion:

In a skillet add in the shallot and jalapeño.

Cook it down for just a few minutes then add in the sausage.  

Break up the sausage and incorporate it with the shallot and jalapeño. 

Add in the cilantro and garlic and combine. 

Add in the cumin, salt, pepper and coriander 

Finish cooking until brown then set aside 

For the eggs you’ll add the 6 eggs and milk to a bowl and season with salt and pepper; then whisk vigorously. 

Add some of the meat mixture to a nonstick pan and then add in some of the egg. 

Combine and cook until the egg is done to your liking. 

In a separate skillet:

Heat up the skillet, add a touch of oil then a tortilla. 

Cover the tortilla evenly with cheese 

When the cheese begins melting lay an even layer of the egg on Half of the tortilla and fold it over.

Flip when it starts to crisp and crisp the other side

Remove and serve with Pico de Gallo and/or any other toppings you like. 

Pico de Gallo 

Mix ingredients together and chill in refrigerator
