
They say the best innovations come from desperation. This dish is a prime example. A few years ago my wife and I were saving money and didn’t want to spend much on groceries. I took a look through the pantry and started to play around; this was the result. It’s still one of her favorite things that I make. The best part about it, is that you can use it as either a standalone dish, serve it with eggs or make it into a burrito.
To make this you’ll need:
2 links of deli chorizo sausage – medallions
Half a tube of the cacique chorizo
Half an onion – rough chopped
Half a bell pepper- rough chopped
Serrano pepper- sliced
I toe garlic- diced
Tajin
Creole seasoning
Salt
4 small to medium sized russet potatoes -diced

This is so simple, all you have to do is fry the cubed potatoes in canola oil until they are crispy- about 10 minutes
Season the potatoes with salt, tajin and creole seasoning while they are cooking and again when the come out of the oil.
Remove the oil and then add in the onion and peppers. When they have softened up season them with tajin and creole seasoning and add in the medallions of chorizo and garlic. Once the chorizo is cooked add in the cacique chorizo and work in until cooked. Once cooked add back in the potatoes and work it all together.
Be sure to keep the family away until you’re done, they will eat it while you are fixing the eggs, I promise.
