olive oil

1 yellow onion- diced

4-5 garlic cloves-minced

2 bell pepper- whichever color combo you like- diced 

1 pound extra lean ground turkey or chicken 

4 tablespoons chili powder

2 teaspoons ground cumin 

2 tablespoons smoked paprika 

Fresh cilantro 

cayenne pepper

salt  pepper and garlic powder 

1 (28-ounce) can diced tomatoes or crushed tomatoes1

 1-1/4cups chicken broth

2 (15 oz) cans chili beans (or any bean combo you like) 

1  (15 oz) can sweet corn, rinsed and drained

1 diced jalapeño pepper 

1 diced Serrano pepper 

For toppings: cheese, avocado, tortilla chips, cilantro, sour cream

I like cotija cheese and avocado 

Put some olive oil in a large pot and place over medium high heat. Add in onion, bell pepper, cumin, salt, pepper, garlic powder, paprika and saute for 10-15 minutes until soft. Give the spices time to mature. 

Add in ground turkey, jalapeño and Serrano peppers and  cook until no longer pink. Next add in chili powder, cumin, cayenne pepper salt, pepper,  garlic powder, garlic and cilantro 

Incorporate everything together and cook until the garlic smell is pronounced. 

Add  in the tomatoes, chicken broth, beans and corn. Bring to a boil, while stirring; then, simmer for 30-45 minutes (stirring occasionally) until chili thickens. 
Be sure to taste and adjust as needed 

Garnish  as you see fit.  I like cotija cheese and avocado, but jalapeños and other cheeses work great also.
