This is one of those great healthy, one pan recipes to feed a family.  You make minimal mess, maximum flavor and everyone is happy with a healthy meal. 

To make this:

Chicken thighs 

Chicken legs 

Greek seasoning 

Cayenne 

Crushed red pepper

Garlic powder 

Onion powder 

Rosemary 

Basil 

Mini potato 

Carrot 

Onion 

Garlic 

Lemon 

Olive oil 

Cut the potato’s in half, peel and chop the carrots into 1 inch pieces, finely diced 4-5 toes of garlic and chop the onion into large chunks 

In a small bow or motor and pessle add the Greek seasoning, garlic powder, onion powder, cayenne, crushed red pepper, rosemary, and basil.  Give them a good mix and set aside. 

Put the vegetables in a large bowl and add 2/3 teaspoons of the seasoning mix and olive oil then give it a good mix, making sure you have good coverage then set aside. 

Take the chicken and pat it dry, then chop  another 4-5 toes of garlic.  Slip some garlic under the skin of t chicken and add the chicken to a large bowl.  

Drizzle some olive oil over the chicken and the remainder of your seasoning and mix in well.  Be sure to get some of the seasoning under the chicken skin as well.

Take a baking pan and arrange the chicken and vegetable over the tray and drop it into a 400 degree oven for 30-35 minuted until the chicken is cooked through. 

I love to serve this delicious chicken and vegetable dish with a side salad.
