After yesterday’s debacle with losing a 20 minute video on an exceptional meal, I decided to make tonight’s easy.  I did my version of a spicy chicken sandwich.  Didn’t check any recipes or do any copycat thing.  I just did what I know and kept it simple.

Making the marinade:

Buttermilk 

Frank’s hot sauce -or the hot sauce of your choice

Huy fong chili sauce 

Paprika

Cayenne 

Cajun seasoning of your choice 

*note if you don’t have buttermilk, you can mix 1 tbsp of lemon juice or vinegar to 1 cup of regular milk. 

Prepping the chicken:

Butterfly the chicken breast and season it with salt, pepper, cayenne and some Cajun seasoning 

Place the chicken breast in a ziploc bag with the marinade, take out the air and leave it be in the fridge for a minimum  3 hours. (I leave mine overnight) 

Breading:

AP Flour 

Corn starch 

Cayenne 

Paprika

Cajun seasoning 

Your favorite chicken seasoning 

Directions: 

Remove the chicken from the fridge about 39 minutes before you cook.  It helps to pull them up to room temp. 

Before you start hearing the oil, roast your buns.  -I always wanted to publish that sentence.  I use brioche buns and butter them before I toast them.  

Set them in a prep area and start bringing your oil up to temp.  Professionally the oil should be at 350 deg. As a born and bread Cajun, it’s hot enough when you drop a pinch of breading in and it starts cooking. 

I put some marinade in  the breading and mix it until it starts to clump but Is still looks.  You just want a few clumps.  

Once the breading is ready, remove the chicken from the marinade and shake off the loose excess liquid then put them into the breading.  Mash the breading into the chicken and get a firm covering.  Shake off the excess and add them to your oil or frying apparatus. 

It should take between 5-7 minutes for tour chicken to cook depending on thickness.  When they are done drain them on a drying rack or paper towel for 5 minuted while you prep your buns and put on the toppings of your choice. 

I made some spicy Mayo with;

Light Mayo

Crystal hot sauce

Huy fong chili sauce

Slap ya Momma Cajun seasoning 

Dash of cayenne 

I also like a slice of provolone cheese, Romain lettuce, pickle, onion and tomato on mine.  I didn’t do that this time because I wanted to keep it simple.
