This recipe is fantastic if you like chicken thighs, like a fast weak night meal, and need something just a bit different.
I started cooking this about 4 or 5 years ago when my wife and I found a huge sale on thighs and had no clue what do with them other than putting them on the grill. It’s amazing how underrated the thigh is. They crisp up well and are packed with flavor; yet, considered by many to be the unwanted trash piece of the chicken.
This dish will single handedly change that view.
So what do we need for the thigh?
Dry them out with a paper towel, put them in a ziploc and make a seasoning blend of:
Your favorite chicken seasoning
Garlic
Salt, pepper garlic powder
Fresh thyme
Fresh oregano
Fresh Rosemary
Put all ingredients in a Mortar and Pestle or food processor and make a paste
Add the paste to the bag with the thighs and work the seasoning in well, set aside for 4 hours or overnight.
For the sauce you’ll want:
White wine- whatever wine you want
—-if you don’t want to use wine substitute for chicken broth and lemon juice
Lemon juice
Heavy cream
Capers
Garlic
Butter
Diced onion
—-mushrooms are good addition here as a well or a substitute for the capers
—artichoke hearts work well also
Get your pan good and hot, add a tablespoon of vegetable oil or cooking oil of your choice.
Sear the thighs skin side down for 8-12 minutes, then flip and finish cooking them for another 4-5 minutes.
Remove the thighs and add 2 tablespoons of butter and the onion (and mushrooms if you’re using those). Cook them down until they just become translucent and add in the wine and deglaze scraping the bottom of the pan. Let the wine reduce by half- about 4-5 minutes. Then add the cream and capers (artichoke if you went that route).
As soon as it starts to thicken add the chicken back in and spoon some sauce over the chicken then add into a 350 degree oven for 15 minutes.
Use these 15 minuted to make your vegetable or sides and drink the rest of the wine.
This will make a wonderful juicy chicken thigh with crispy skin and full of flavor. You may want some bread to soak up the sauce also.
