This dish is something my wife cooks fairly often for the kids.  It’s one of those things that she will always make better than I do, so what better person to explain it than her.  The dish was new to me when I moved to Ohio 5 years ago, so was tilapia for that matter. You could sub out tilapia for most other mild fish for this as well. Flounder, catfish , trout, or even red fish would work for this perfect, quick weeknight meal.  It’s packed with flavor, and a great way to make young people eat fish.  Seriously on that note, one of our kids does not like seafood and he will eat 4 pieces of this. Serve it with a side of your favorite vegetable or pasta.  

To make this you’ll need:

2 pounds Tilapia filets

Mayo-2.5-3cups

Minced garlic 

Basil

Lemon juice 

Old bay 

1 stick butter 

Paprika 

Hot sauce

1 cup parm cheese divided 

First you’ll lay out the filet on a baking dish, and in a separate bowl combine all ingredients leaving half a cup of the parmigiana on the side 

Cover the fish in the sauce and bake for 4 minutes at 425 degrees. Remove the pan and flip the fish then cover in the remaining sauce  and top with the left over parmigiana cheese.  Put it back in the oven for an additional 5-7 minutes. 

It’s really that easy.  Often times we’ll have this with a side of asparagus or spinach.  This time I used a porcini pasta from our local Italian deli. This meal really is ideal to help get that seafood fix in with a quick to prepare meal.
