I love lettuce wraps, it’s a light, flavorful indulgence for me. These are very similar to what you’ll find at PF Chang’s.  Not quite the same, but the concept is similar.

Making this dish is also very quick.  Prep is quick, cook time is fast, and the reward is huge.  One thing of note is that while I use ground turkey, you can easily sub out for ground beef or ground chicken.

To make this you’ll need:

1 – 1.5 pound ground turkey

2 garlic toes-minced

1/2 red bell pepper-diced

1 yellow onion- diced

1 Serrano or red chili pepper-diced

1/4 cup hoisin sauce

2 tablespoons soy sauce(sodium free)

1 tablespoon rice wine vinegar

1 tablespoon freshly grated ginger

1 -2 ablespoon Sriracha, optional

1 (8-ounce) can water chestnuts drained and diced

2 green onions, thinly sliced

salt,  pepper and crushed red pepper to taste

1 head butter lettuce

Heat up your favorite skillet and cook down the onion, res bell pepper One minuteand Serrano in olive oil.  Once cooked down add in the ground meat of your choice and cook until browned.  I like using a higher heat gear to get some crispy meat edges.

Drop in the garlic, hoisin, soy, vinegar, ginger  and sirache and cook until fragrant (1-2 minutes)

Season with salt, pepper and crushed red pepper

Add in the water chestnuts and green onion and only cook long enough for the chestnuts to get tender.  This should only take about another minute and shut off the heat.  The residual heat will finish it off.

To serve take some butter lettuce and spoon the mixture onto the middle of the leafy and eat like a little, tasty Lettuce taco

Note: if you don’t like spicy, simply remove the Serrano or red chili and crushed red pepper
