This is a new on me.  My wife is a really good cook; however, she doesn’t get the opportunity to cook very often.  She decided on a whim that she wanted to cook one of her favorite dishes from when she was younger.  So, I watched to see what she was doing.  I’m always amazed at the difference in food cultures from carrying parts of the country.  We use rice as a standard carb for most meals down in cajun country, they use masa  in the southwest, here in Ohio it’s potatoes.   She didn’t have a name for this, so I’m calling it yankee potatoes.  Y’all have to try this:  it’s quick, flavorful, inexpensive to make, and a great weeknight dish! 

To make it she used:

4 tablespoons butter

4 russet potatoes – diced 

1 pound of kielbasa- sliced

1 onion diced

3/4 green bell pepper- diced 

1 bottle of Italian dressing(zesty)

A handful of canned banana peppers 

Seasoned salt -lowrys or make your own 

  We made our own here- sugar, salt, onion powder, garlic powder, paprika, cayenne

First thing she did was heated up the cast iron and added in the butter and potatoes.  She let them cook for about 7-8 minuted until they started to soften.  After they were close to fork tender, she dropped in the veggie and salad dressing, and let those cook down.  When the veggies are cooked down and the dressing is reduced into a thick sauce, she added in the sausage and a bout 2 tablespoons of the seasoning salt.  Then let it cook down until it was thickened up and almost caramelized.
